Is it just me or has Summer 2016 ended? This week we have had nothing but rain and so to cheer myself up I made pancakes, but not just any pancakes... Jamie Oliver's American Style Pancakes! This recipe makes 9 fluffy pancakes and is super duper easy to follow!
American Style Pancakes
Ingredients:
- 280ml milk
- 230g plain flower
- 6 eggs
- 2 teaspoons baking powder
- 2 pinches salt
First, separate the egg whites from the yolks and place into separate mixing bowls. In the first bowl, whisk the egg whites with the salt until it has formed stiff peaks. In the second, add sifted flower, baking powder and milk to the egg yolks and beat well. Slowly fold the egg white mixture into the second bowl; making sure the mixture stays light and fluffy. Finally, spoon the mixture into a non-stick frying pan (unless you prefer to use butter or oil) that is on a medium-low heat. When little bubbles start to appear on the surface it's time to flip the pancake, leaving it an even gold colour.
Now all that's left to do is get creative... Personally, you can never go wrong with a bit of fruit and syrup!
